Born in Seoul, South Korea on September 9, 1998, Choi began skating in 2004, influenced and encouraged by her father

Cui Minjing put his future as an athlete early, and her mother also fully supported her. Every time Choi Min-jung's coach changes the rink, the whole family moves with him. From Sindang-dong, Seoul, to Hyehwa-dong, Bundang, Gwangju, Gyeonggi Province, and back to Bundang, Yeonnam-dong, and now home, the family has moved seven times to train for skating

In March 2014, Choi made her debut at the World Junior Short Track speed Skating Championships, winning a gold medal in the 1,000 meters and a silver medal in the 1,500 meters
