3. Click "Technology selection" to adjust and select the required technology according to the smoking request and technical process of the product; Adjust the corresponding temperature and time together, usually the drying temperature of the smoker is set within 70 degrees, and the cooking temperature is only 95 degrees Celsius; After the setting of the smoker, click "Technology enable", click the "monitoring screen" on the smoker after coming back, and press "Start" after the smoker equipment will operate according to the set technical parameters;

4. The steam pressure required for drying in the smoker is not less than 0.3mpa; The pressure required for cooking in the smoker is low pressure, and it should not be higher than 0.15mpa. If the pressure of the smoker is too high, the product will heat up rapidly, and the quality of the product may be decreased. The adjustment of the fume pressure is controlled by the valve at the front of the fume solenoid valve.

5, the temperature of the commodity base is induced by the temperature probe of the pointed head of the smoking furnace, which is usually pierced into the inside of the commodity; The temperature in the smoker is induced by the temperature probe with the round head, and it can be dropped inside the smoker body.

6, in case of emergency, press the "emergency stop" switch on the panel of the smoker immediately, and the smoker can be opened again after the fault is removed;

7, at the end of every day, the smoke furnace equipment should be cleaned, the smoke furnace cleaning door should be closed, open the smoke furnace cleaning valve (can start by pressing the "high pressure valve" and "fan high speed" in the "test function" to improve the internal temperature of the smoke furnace body to improve the cleaning effect of the smoke furnace); The cleaning inside the smoker body can be scrubbed with alkaline solvent;

8, after the completion of all operations, you should check again whether there is a foreign body in the smoker furnace, whether there is an open flame in the smoker furnace, and close the power supply, compressed gas, steam, and tap water of the smoker before leaving the scene.
